Discovery and Quantification of Novel Gluten Immunogenic Peptides and Their Deamidated Forms in Human Urine after Gluten Intake.
Description
The University at Buffalo (UB) School of Pharmacy and Pharmaceutical Sciences is enrolling adults in a gluten study. Gluten is a type of protein found naturally in certain cereal grains. The goal of the study is to learn more about molecules that are present in the urine after eating gluten.

Participants will be enrolled in the study for 5 days and will attend two study visits on the UB Downtown Campus (at 701 Ellicott Street). They will follow a gluten-free diet every day and eat two bagels as a gluten challenge on Day 4. They will collect all urine following the gluten challenge until the morning of Day 5. Participants will receive a $50 Amazon gift card for completing all study parts.

Adults 18 years or older Have not been diagnosed with Celiac Disease Do not have symptoms of Celiac Disease Not currently pregnant or breastfeeding Willing to eat a gluten-free diet for 5 days Willing to perform urine collections
